Should I keep my back straight in every exercises?

For example when sitting and simply trying to reach my toes (with my feet together), if I don't keep my back straight I can grab my feet. But if I try to keep my back straight I can barely pass my knees... am I doing it wrong if my back is curved? Does it matter in all flexibility exercises?

Hamstrings are incredibly tight. I’d like to make them more flexible to help with squats and deadlifts. Help?!

    Alternative to this exercise?

    Alternative to this exercise?

Because I have a permanent injury on both knees, it's impossible for me to lean on it so hard. Is there another exercise that focuses on the same muscle groups, but without resting on the knee? I feel a deep stretch in my thighs when I try it anyway and therefore I know that I really should train those muscles, because they feel very stiff. Unfortunately, putting a pillow under my knee or kneepads do not offer enough protection. So I really need a totally different exercise.
