On apps such as "splits in 30 days", why is it that all of the stretches don't have multiple sets?

I'll clarify. I've been lifting weights for a while now, and over the past couple months I've been getting into yoga, but I've decided I need to train specifically flexibility, half because it's gonna help a lot with yoga. Anyway, with weightlifting, it's usually something like 5 sets of 12 reps, 4 sets of 10 reps, whatever, because that's what gets the muscle fibres repaired in the most optimal way. But there are always multiple sets. In these apps for flexibility and yoga training, all of the exercises are very much "do this for 45 seconds then move onto this one".

I suppose my question is why don't you do multiple sets when training flexibility? (While I'm here, are these apps any good? They seem a bit gimmicky.) I'm looking for an at least sort of scientific answer about what goes on biologically.
